Hey Lex... there are several things that factor into the feel of a bouzouki...
* The tension of the strings can be affected by the gauge of the strings. Some string manufacturers use a lighter gauge of strings than the widely accepted standard of .011, .014, .022 and .028. Lighter gauged strings do play softer, but usually at the expense of the tone.
* The feel is also affected by the scale length of the bouzouki. It is my understanding that some luthiers offer three scale lengths. I'm usually more comfortable on a medium or short scale instrument... But surprisingly, the bouzouki that's easiest to play in my collection has the longest scale.
* Proper setup of the nut, bridge and frets. Man, this can make a world of difference, but you really need to have a good luthier do this, especially one who understands bouzouki. Once again, my buddy, Lou Skoby is da man for setups!
* And finally... and this is HUGE... the SOUND of the bouzouki can make or break the feel. If you have an instrument that is responsive in tone and volume, you will have an instrument that's very soft to play as long as the other factors have been addressed. Since my long scale bouzouki has a very responsive kapaki, and it has been setup perfectly, and I use good quality strings, the instrument plays like a dream.
I hope that gives you some things to look for. I'm curious to hear other thoughts on this.
